  1. These are a favorite at our house. Our 4-year old son likes them better than traditional pancakes!

    Protein Pancakes

    6 egg whites
    1 cup old fashioned oats (not quick cook)
    1 cup fat free cottage cheese
    cinnamon to taste
    vanilla extract to taste

    Blend in blender and cook like regular pancakes.

    Fantastic with fruit on top and a low calorie syrup. Also very yummy when used as bread for a peanut butter sandwich.

    Alternative: If you're not worried about fat, use 4 whole eggs in place of the egg whites.
